Monday Morning Quaterbacking

Well, my Mexican fiesta was a bit disappointing.  Let's follow up play by play:

  • Tequila Lime Chicken Wings- Ok wings are pretty good even when they're bad.  That said, these wings lacked any real flavor, except for a bitterness from the lime juice.  The other flavors- tequila, cumin and adobo sauce were totally lost.  Wouldn't do again without tweaking this receipe.  I was thinking there needed to be some butter or oil somewhere in the marinade, kind of like hot wings.
  • Taco Bar-  The best of the bunch.  You can't go wrong with taco filling, warm taco shells, shredded lettuce, chopped tomato, fresh salsa and a shredded mexican cheese blend.
  • Gucamole and Tortilla Chips-  I made the gucamole fresh (see picture), it was good except the red onion was kind of strong.  Should of soaked the onion in some ice water first.
  • Tequila Lime Dessert Bars- These were kind of bland.  It seemed to me they needed something else.  The tequila was unpronounced and the lime was kind of blah.
So over all no real winners here, and no, I'm not going to Disney World.
